Day 255 / Lunch Downtown

One of the perks to working in Downtown Austin is getting to try new restaurants that so quickly sprout up within walking distance. Today, a co-worker invited me to the soft opening of Italic. We’ve been waiting with bated breath to see what new establishment would pop up across the street from our office. 

I had an Italian sausage pasta dish. It was simply delicious. We even treated ourselves to dessert – chocolate chip gelato. It was such an enjoyable meal, and I’m grateful for a delightful lunch downtown.   

Day 254 / Ava’s Clean Room

Sunday a week ago, I spent most of the day cleaning and organizing Ava’s room. I’m thankful today that not only has her room stayed clean, but Ava’s new appreciation for her clean room has motivated her to keep it clean. She keeps her shoes organized and puts her toys away after playing with them. My baby girl is growing up!

Day 253 / Sunday Movie Date with The Girls

My Mom Judy and I took Alexa and Ava to see Cinderella today. We were all very impressed with the movie. The best part was the Frozen short at the beginning that had Ava mesmerized. I regret not capturing a photo of her beaming face. Nonetheless, we have a wonderful afternoon together, and I’m grateful for such a fun movie date with them. 

  

Day 252 / Engagement Party

Today we drove to Spring, Texas to attend the engagement party of one our long-time family friends. First of all, I love weddings and anything wedding-related. Secondly, at our age, weddings are very few and far between. Lastly, getting the opportunity to get together with family and friends for such a joyous occasion, it goes without saying that I was jumping-up-and-down-excited. 🙂

It turned out to be a lovely affair. The bonus being that our little family – Donovon, Alexa, Ava, and I – got to spend some nice quality time together. I’m so grateful for being surrounded by family and friends in celebration of young love!  

Day 251 / Donovon’s Shrimp Bisque

I realize I post a lot about food, but I’m a little obsessed with food and grateful as a whole that I’m not hungry.  Further, I’m ridiculously fortnuate that my husband loves to cook and feed us.

Tonight, he made a shrimp bisque that blew. me. away.  It was really hard to stop at two bowls.  I continue to be amazed by Donovon’s mad cooking skills.  Tonight, I’m so grateful for his exquisite shrimp bisque.  

Day 250 / Enchiladas Y Mas

Tex-Mex is a very important food group in Texas.  Most Texans have their favorite Tex-Mex restaurants that they argue is the very best.  We tend to use varying qualifiers of what makes the best Tex-Mex restuarant — the salsa, the fajitas, the tortillas.  For me, if you can’t nail cheese enchiladas, then you may as well not be in the Tex-Mex restaurant business.

Which brings me to the title and subject of this post — Enchiladas Y Mas.  Enchiladas Y Mas is my all-time favorite Tex-Mex restaurant.  In my humble opinion, they have hands-down the best cheese enchiladas ever, not to mention their beef and chicken fajitas.  Donovon and I have been going their for over 20 years, so place holds a certain sentamentality above their yummy food.  

Today I’m grateful for my favorite Tex-Mex restauarent, Enchiladas Y Mas, and their ridiculously delicious cheese enchiladas.  

Day 248 / My Aunties

Auntie Ruby, Auntie Helen, and Auntie Lea are My Mom’s sisters.  They are a smart, delightful trio for whom I have nothing but respect and adoration. 

After Daddy’s stroke and passing, my aunties held us all together.  They organized the family functions, helped out at my parents’ house, made sure food was plenty, and most importantly were there to hug and hold us as we were are consumed with grief. 

As I think about the great times we all had together on our trip to Italy, their love and comfort throughout my father’s ordeal less than a year later, and all the family events prior, I feel incredibly grateful that they are in my life and part of my family. 

Thank you, Auntie Ruby, Auntie Helen, and Auntie Lea for all your love and support throughout the years. I love all of you so much.
